Esteemed chef and restaurateur Costas Spiliadis is bringing his celebrated Greek dining concept, estiatorio Milos, to West Palm Beach on February 6, marking the twelfth global location and the second in Florida.

 

Known for its commitment to fresh ingredients and authentic Greek cuisine, the restaurant will be situated in the prestigious One Flagler office tower within the Flagler Waterfront District, elevating the area’s culinary landscape.

Founded in 1979 in Montreal, estiatorio Milos has established itself as a paragon of Greek fine dining. Renowned for its dedication to philoxenia—the Greek tradition of warm hospitality—the restaurant specializes in Mediterranean seafood, locally sourced produce, and expertly prepared meats. The West Palm Beach location promises to continue this legacy, offering guests a refined yet inviting atmosphere where the vibrant flavors of Greece take center stage.

Estiatorio Milos brings fresh Mediterranean seafood

Chef Spiliadis expressed his excitement about the new opening, saying: “Bringing estiatorio Milos to West Palm Beach is a natural progression for our journey. This community embodies the elegance and charm of our brand, and we look forward to sharing the traditions and flavors of Greece with our new guests.”

 

Central to the Milos experience is the stunning fish market display, showcasing rare and fresh Mediterranean seafood alongside seasonal vegetables. Guests can personally select their fish, which is then prepared using methods such as sashimi, grilled, or baked in sea salt.

Signature dishes include the famous Milos Special, featuring lightly fried zucchini and eggplant with saganaki cheese, the Lobster Pasta, and Tuna Tartare with exclusive Milos olive oil. Desserts, including thyme-infused Greek yogurt and decadent Baklava Kaimaki, complete the menu.

 

The restaurant also boasts the most extensive selection of Greek wines in Palm Beach County, featuring indigenous varieties like Assyrtiko, Xinomavro, and Agiorgitiko. Each bottle has been carefully curated to complement the flavors of the cuisine.

A celebration of Greek gastronomy

Designed by Tara Bernerd & Partners, the 294-seat space seamlessly blends contemporary elegance with natural Greek aesthetics. Pentelikon marble, oak, olive trees, and earthy tones create a warm, inviting environment. Highlights include a dramatic staircase, an open display kitchen, and a second-floor bar with terrace views of the Flagler waterfront, offering a more intimate setting for diners.

 

Located at 170 Lakeview Ave, West Palm Beach, FL, estiatorio Milos will anchor the newly developed One Flagler, a 25-story tower merging historic charm with modern luxury.

With over 270,000 square feet of premium space and world-class amenities, the tower aims to be both a dining and professional hub. Starting February 6, Milos will open daily for dinner, with plans to introduce lunch service shortly thereafter.
