The dining experiences at Kanai honor both innovation and heritage. At Ki’is, helmed by acclaimed chef Paco Ruano, local flavors of the Yucatan are elevated through contemporary technique. 

 

Every dish reflects the peninsula’s character, turning traditional ingredients into culinary revelations. 

 

Meanwhile, So’ol, overseen by Tomas Bermudez, celebrates the sea. 

 

Oysters harvested fresh, tuna tostadas drizzled with creamy avocado, and aguachiles glowing in citrus vinaigrette define a menu that embodies coastal Mexico.

The Spirit of Cenotes in Architecture

The Yucatan Peninsula is famous for its cenotes, natural sinkholes that reveal crystal-clear water. Schrager and his collaborators drew inspiration from these geological wonders to shape the resort’s architecture.

 

The three main buildings converge around a central platform that functions as a yoga deck, elevated over pools of water. 

 

Beneath it lies the spa, a sanctuary designed like a cenote cavern. Sunlight filters through a skylight, bamboo roofs ripple like mangrove branches, and curved hallways lead to spaces of renewal—hydrotherapy pools, a Turkish hammam, and infrared therapy rooms.
