Sushi Bar Miami Beach offers a refined omakase experience that awakens the senses

The Omakase experience at the Sushi Bar is dominated by amazement from start to finish.  This is due in part to its location on Espanola Way, situated on Washington Avenue in the heart of Miami Beach, a Latin enclave that is very attractive to tourists.

The surroundings of the Esmé hotel, where the Sushi Bar is nestled, provide a typical Miami atmosphere that is very Caribbean and representative of this Florida city, which has become a mosaic of American cultures. This does not seem like a peaceful location to savor Japanese cuisine

Upon entering Esmé, a sense of amazement fills us. The noise and overwhelming rush dissipate, replaced by a relaxed atmosphere. The spaces are decorated in a European style with vintage details. We are escorted to Le Salone, where Shawn Abreu, assistant to the General Manager of Sushi Bar, greets us with a welcome cocktail. He is accompanied by the maitre d’ and the sommelier.

One-hour session

Upon entering the restaurant, the dim lighting, wood paneling, and classic furniture create a relaxing atmosphere. Chillout music with Latin influences plays in the background, reminding patrons of Suhi Bar’s location.

Abreu escorts the diners to their respective booths, each labeled with their name. The ritual begins for the diners and the show for the staff: a damp napkin waits for each customer’s hands to be cleaned, while the chef and his assistants show off their dexterity with the kitchen tools and begin to prepare each of the 17 omakase dishes.

At first glance, Sushi Bar appears to embody the traditional spirit of Japanese omakase, where the chef has the creative freedom to choose each dish, delighting the diner’s senses. However, at this ‘baby venue,’ as it is called, the experience goes beyond just the food.

Chef Francis and his assistants, Jeremy and Julio, meticulously prepare each bite while sharing stories about the Japanese tradition of omakase and how the environment of La Española Way influences each dish, resulting in a fusion cuisine.

The trio mentions that, in addition to the quality of the product, they incorporate techniques and elements from Mexico and other parts of Latin America to create new and exciting options that cater to customers’ interests. This results in surprising flavor combinations, such as fresh Japanese fish with touches of jalapeños, as well as contemporary dishes featuring smoked and seeded ingredients. In the kitchen and in front of the guests, the chef’s every move seems calculated and prepared, even the most conventional act, such as cleaning a knife, becomes an exquisite execution.

While the stories of the ingredients and culinary techniques may be endless, between one dish and the next, the chef recommends closing your eyes to fully appreciate the flavors. They also advise using the right amount of wasabi to awaken the taste buds that react to both spicy and sweet flavors. Additionally, they recommend savoring the caviar pearls without hesitation, as it provides a burst of flavor in the mouth.

The dishes feature a variety of ingredients, including king salmon, bluefin toro, unagi, kanpachi, midai, and sawara, accompanied by sake or sauvignon blanc from an exquisite list chosen for the occasion.

Finally, for dessert, we enjoyed a magnificent buttery ice cream with crunchy cookie pieces. After an hour, our experience at the Sushi Bar restaurant in Miami Beach came to an end. We had to make way for another group of diners who had also scheduled a visit for this intimate omakase experience.
